NGC 1600 was easy to locate and not difficult to see either.  I rated it as fairly large, with a slight central condensation, although the surface brightness was not high.  Keep in mind that "large" to me on this evening is still pretty small, but everything is relative!
I navigated to its location by starting at ν Eridani and working my way down to the southwest to the pair of equal-brightness stars oriented NNE-SSW, with another equally bright star to their southeast.  The galaxy is nestled in a spot WSW of the that star.
